Barnyard millet is a healthy source of protein and fat content, 10.52% and 3.56% respectively. The carbohydrate content is relatively low (68.76%) with a calorific value of 398kcal/100g. It has a total mineral content of 2.02%, including iron, copper, zinc, manganese and magnesium. Barnyard millet is a good source of nutraceutical components like dietary fiber (12.60%) of which 8.36% is insoluble fiber. The antioxidants of Barnyard millet,i.e. tannins (62.50%), total free phenols (51.00%) and phytic acid (96.00%),are fairly high.

Banyard Curd Rice 
 
Ingredients:
 
 
Barnyard millet rice-1 cup
water-3 cups
Milk-34 cup
thick curd/yogurt-12 cup
Salt to taste
 
to temper:
 
 
Oil-2 tsp
mustard-1 tsp
chopped ginger-12 tsp
green chilly-1,chopped finely
 
Method:
 
1.Wash the millet well and pressure cook it with 3 cup water for 3-4 
whistle.After the pressure is released open it and mash well when it is
hot.
 
2.Then add the milk and mash it well.Allow it to cool before adding the 
curd/yogurt.
 
3.Meanwhile temper all the ingredients under " to temper" .Add curd and 
tempered items to the mashed millet.Add salt and mix well.
 
You can add grated carrot,chopped cucumber and pomegranate to it to make  more colourful
